Every time cooking oil is cooled and reheated to extreme temperatures, its chemical structure undergoes a drastic transformation. Scientifically, consuming food cooked in reheated oil leads to severe oxidative stress and chronic inflammation, which are known precursors to cellular mutations and cardiovascular diseases.
Carcinogens in Starchy Foods: The Acrylamide Factor
